"Roast Butter Garlic Potatoes"


Christmas time is all about comfort food. Roasts, curries, Biryanis, Cutlets and so on. Each dish is prepared with immense love and warmth to make your holidays more special.
When we talk about roasts or dinner food, one thing that cannot be missed is Potatoes. Mashed, sauteed, grilled, boiled, fried, curried, etc etc. Trust me you can make n number of dishes with this humble vegetable called potato and pair it up with the Christmas feasts.
So, today I'll share a recipe which goes perfectly well with Roast Chicken, sauteed beans and glazed carrots.
The final outcome of these Roast Potatoes is mouthwatering and you will definitely forget everything else once you start munching them :)
Enjoy the recipe and do prepare it this Christmas. 


" Roast Butter Garlic Potatoes"

Ingredients :

1 kg potatoes
6 tbsp Butter -melted
5-6 Garlic cloves
Salt to taste
& Coriander Mint leaves for garnishing
Italian Seasoning ( optional)

Preparation:
  • Peel and cut the potatoes ( each into 4 pieces)
  • Preheat the oven at 200*C for ten minutes.
  • Heat a lot of water in a big pan and once it comes to boil, drop the potatoes and cook for around 5 minutes. Sieve and shake well.
  • Crush the garlic and mix well with melted butter
  • In a baking tray or roasting tin mix the potatoes with garlic butter.
  • Bake in the preheated oven for around 40-50 minutes till crisp and golden from all sides. ( After 15 minutes, turn the potatoes to cook from the other side in the oven. You can repeat this by shaking the tin or tray twice so that potatoes roast from all sides)
  • Once fully roasted, remove the tray from the oven. Season with salt and italian seasoning and shake well.
  • Remove the potatoes on a serving plate and garnish with coriander and mint leaves. 
  • Serve warm with as a snack or as a dinner accompaniment.
Note : You can serve these potatoes with mayonnaise dips if serving as a snack. You can skip the garlic if you want a plain buttered flavour. You can also garnish with rosemary or thyme to add herb flavours. Use of low fat butter makes this dish a little more healthier ;)

" Fish fry with Eggy Potatoes"

December evenings gives us more reasons to try out comfort cuisines to make these days more special and cosy. 
I bought fish fillets and tried one fish fry recipe and teamed it up with eggs and potatoes in a different style. The combination worked really well and goes well with rice or breads.
You can use any white fish fillet of your choice and taste. I used the Indian Salmon fish for this recipe. 
Hope you enjoy this Indian style fish and eggy potatoes to relish in this chilly weather.


" Fish fry with Eggy Potatoes"

Fish Fry recipe --
Ingredients :
4 white fish fillets
coriander leaves
mint leaves
ginger garlic paste - 2 tbsp
lemon juice - 2 tbsp
salt as per taste
red chilli powder - 1 tsp
cumin powder - 1 tbsp
turmeric powder - 1 tbsp
rice flour or bread crumbs - 1 cup
olive oil for shallow frying

Preparation:
  • Wash the fish and keep aside.
  • Grind all the spices except rice flour and oil with coriander and mint to a fine paste.
  • Marinate the fish fillets with this paste and keep aside for sometime before frying.
  • Heat oil in a non stick pan. Dust the fish in the rice flour/bread crumbs and then shallow fry them in hot oil till crisp and cooked from both the sides. ( keep the flame low while cooking so that fish cooks evenly from inside)
  • Remove on a kitchen paper and serve with lime.

Eggs and Potatoes Recipe --
Ingredients:
4 eggs hard boiled
2 tsp lemon juice
5 potatoes boiled and cubed
3 tbsp grated coconut blended to a paste
1and 1/2 cups water
few curry leaves
salt as per taste
1/2 tsp turmeric powder
4-5 cardamom pods
2-3 cloves
1 tsp coriander seeds
2 dried red chillis
green chillis, slit
chopped ginger and garlic cloves
1 onion chopped
oil for cooking
chopped coriander leaves

Preparation:
  • Roast the dry spices and blend to a fine powder
  • Heat oil. Fry onions with ginger and garlic till lightly cooked.Add green chillis and saute
  • Add the ground fresh masala( spices), turmeric and curry leaves. Fry well
  • Add water, coconut paste,potatoes and salt. Cook the potatoes till nearly done
  • Add eggs and little more water ( if required). Cover and simmer for few minutes.
  • Add lemon juice and coriander leaves and serve with fish fry and rice.


Note : My aunt gave one tip that if you season the fish with a little salt and keep aside before marinating then it catches the spices well. You can add boiled peas to the eggs recipe to add more flavour and taste.
