"Veggie Cutlets"

Winter is all about comfort food. Its all about hot and yummy food which keeps you warm inside out and makes you happy. I think I should dedicate my blog to complete winter food as its the best time of the year to cook and enjoy hot food. I love to gorge on pizza, cutlets, warm puddings and cakes with endless cups of ginger tea and coffee :) I am sure you do the same but in a healthy way. So let me share a simple veggie cutlet recipe which i made this week. Vegetables and bread crumbs add taste and texture to this cutlet and makes it one of the most wannabe comfort cuisines. 


" Veggie Cutlets"

Ingredients :

1/2 kg potatoes boiled and mashed
1 cup peas boiled and mashed
1 carrot finely grated
1 big onion finely chopped
2-3 green chillis finely chopped
2 spring onions finely chopped
few sprigs of coriander chopped
few sprigs of mint chopped
1 egg
1 cup bread crumbs
salt as per taste
1 tbsp red chilli powder
1 tbsp cumin powder
1 lemon juice
Olive oil to shallow fry the cutlets

Preparation:
  • Mash and mix the potatoes and peas. Add all the ingredients to the mixture except for egg and oil and mix well with hands. Make it like a smooth dough which can be shaped into cutlets
  • Make small balls and shape into cutlets in oval or rounds. Keep aside
  • Whip the egg in a wide bowl with a pinch of salt. Place the bread crumbs in a flat plate. 
  • Heat little olive oil in a non stick pan. Dip the cutlets in eggwash and roll with bread crumbs.
  • Shallow fry in hot oil till crisp and brown from both the sides.
  • Remove the excess oil on a kitchen paper before serving. Serve hot with Mint chutney or tomato sauce.
Note : You can use any other frying oil of your choice though the cutlets will be light and healthy if fried in olive oil. You can also add more vegetables to the recipe like capsicum, cabbage, cottage cheese,etc. If you dont want to use eggwash then you can replace it with plain flour batter. If you dont have bread crumbs, you can replace it with semolina or rice flour to add crisp texture and taste.

"Cheese Souffle"

There is a nip in the air. Cold waves are blowing and chilly winds are keeping us indoors in our comfort zones.
We like to cuddle up in our quilts and sip on endless cups of ginger tea and coffee and love to feel lazy at all times ;)
Nothing can be more comforting in this cold weather than some yummy warm food. Apart from the great taste, it also keeps us warm to fight the cold winds.
Today I am sharing a recipe of simple Cheese Souffle. Its warm, gooey, yummy and cheesy. Enjoy with a hot cuppa of cocoa or hot chocolate with this souffle and get cosy in this amazing weather.

             
"Cheese Souffle"  

Ingredients :

1 cup water
65gms grated cheddar cheese
1 tsp red chilli powder or chilli flakes
2 tbsp flour
salt as per taste
2 eggs seperated
1/2 tsp sugar
1 tbsp lemon juice
Italian Seasoning ( optional)
Butter to grease

Preparation:
  • Preheat the oven at 250*C for ten minutes before baking
  • Grease the muffin or souffle moulds with butter and keep aside
  • Bring water, cheddar cheese and red chilli powder to a boil together. Keep stirring with a whisk to mix it completely.
  • Add flour and keep cooking on low flame for around 5 minutes till it becomes smooth and thick.
  • Strain the sauce in a seive and keep aside.
  • Take egg whites in a bowl, add sugar, salt and lemon juice. Warm it a little on a double boiler to melt the sugar a little. 
  • Beat the egg mixture with a hand mixer till soft peaks are formed. You can use a whisk but the eggs will not get that fluffy.
  • Add the mixture in the cheese sauce and mix well.
  • Pour the mix in the moulds and bake at 225*C for 10 minutes. 
  • Serve hot with coffee or tea.
Note : While adding salt, be careful and taste as the cheddar cheese is already salty so only a pinch more will be required. You can use processed cheese too if you dont get cheddar cheese. You can add some boiled or steamed veggies to the mix before baking to get a more rich and healthy taste.
