There is a nip in the air. Cold waves are blowing and chilly winds are keeping us indoors in our comfort zones.
We like to cuddle up in our quilts and sip on endless cups of ginger tea and coffee and love to feel lazy at all times ;)
Nothing can be more comforting in this cold weather than some yummy warm food. Apart from the great taste, it also keeps us warm to fight the cold winds.
Today I am sharing a recipe of simple Cheese Souffle. Its warm, gooey, yummy and cheesy. Enjoy with a hot cuppa of cocoa or hot chocolate with this souffle and get cosy in this amazing weather.
"Cheese Souffle"
Ingredients :
1 cup water
65gms grated cheddar cheese
1 tsp red chilli powder or chilli flakes
2 tbsp flour
salt as per taste
2 eggs seperated
1/2 tsp sugar
1 tbsp lemon juice
Italian Seasoning ( optional)
Italian Seasoning ( optional)
Butter to grease
Preparation:
- Preheat the oven at 250*C for ten minutes before baking
- Grease the muffin or souffle moulds with butter and keep aside
- Bring water, cheddar cheese and red chilli powder to a boil together. Keep stirring with a whisk to mix it completely.
- Add flour and keep cooking on low flame for around 5 minutes till it becomes smooth and thick.
- Strain the sauce in a seive and keep aside.
- Take egg whites in a bowl, add sugar, salt and lemon juice. Warm it a little on a double boiler to melt the sugar a little.
- Beat the egg mixture with a hand mixer till soft peaks are formed. You can use a whisk but the eggs will not get that fluffy.
- Add the mixture in the cheese sauce and mix well.
- Pour the mix in the moulds and bake at 225*C for 10 minutes.
- Serve hot with coffee or tea.
Note : While adding salt, be careful and taste as the cheddar cheese is already salty so only a pinch more will be required. You can use processed cheese too if you dont get cheddar cheese. You can add some boiled or steamed veggies to the mix before baking to get a more rich and healthy taste.
